Hello, my peeps!
For a couple months now, I have been looking into veganism and eating less processed foods. The reason why I wanted to go vegan was for health reasons and trying to nourish my body with more wholesome foods. I live in a college dorm, so that is an incredibly hard task since I have a meal plan and I do not know what the ingredients in each thing that I eat are. Now that I am home for the summer I have tried going vegan and this has been my experience so far plus I will be sharing what I ate for an entire day as a vegan.
For breakfast, I had a rice cake with OLLI peanut butter (Made in Honduras) and pieces of 70% dark chocolate. In all honesty, this has been my go-to snack/breakfast for the past week, it tastes amazing and it is pretty filling as well.
For lunch, I had:
- Sweet potatoes cooked with coconut oil seasoned with paprika, garlic salt, pepper and sea salt.
- Salad with kale, romaine lettuce, spinach, vegan cheese, alfalfa sprouts and an onion vinaigrette
- Hummus and Ketchup.
This is an all-time favorite snack of mine. Granny Smith apples and peanut butter. Filling and delicious.
Dinner was not much but I really enjoyed it. I had hummus and toast topped with alfalfa sprouts and some mango on the side.
During the day I did not have any cravings for sugar or meat which was pretty great. The food was good but nevertheless and I am not fully vegan, I am vegan-ish. The second day I had chicken because I went out and had dinner with friends lol. The options in restaurants are very limited and it is hard to find places that serve vegan meals, at least here in Honduras.
What I have learned from this is that veganism is definitely not for me but I enjoy having at least one vegan meal during the day and incorporating more greens and veggies in my meals. From this short experience, I learned more about nourishing my body with fresh and healthy foods and to be more conscious about what I eat. Being vegan can be challenging but if you are curious I would definitely recommend you to try it.
